Techniques for Flour Milling Bakers

For bakers working with home-milled grain, this hands-on session focuses on the know-how that makes the shift from white or store-bought whole-wheat flour to freshly milled flour successful. Led by a sourdough specialist with 11 years of exclusive experience using fresh-milled flour, it packages hard-earned lessons from years of trial and error. Learn how to achieve light, tender sweet breads, tall and well-fermented crusty sourdough loaves, airy and crisp pizza crusts, and classic English muffins. The conversation also covers favored grain varieties for breads, tortillas, pie crusts, pasta, and more. A core theme is how true leavening unlocks both superior flavor and nutrient potential, with clear guidance on the differences that can frustrate even seasoned sourdough bakers, including issues like a white-flour starter that refuses to adapt. Participants can pick up a fresh-milled starter if needed, taste baked examples, and take part in a dough-mixing segment to build confidence with this valuable tool in the kitchen. RSVP is $30 via Venmo, and attendance is limited to 10 due to parking.

6-Week Intermediate Carolina Shag Dance Class Series

This six-week intermediate Carolina Shag series focuses on moving beyond memorized patterns and into a true sense of partnership and flow. Instruction centers on the dance’s legacy and on lead and follow as a genuine, wordless conversation, where clear physical invitations meet attentive, responsive listening. Dancers work toward an intuitive connection that feels seamless as both partners move with shared intention. Technique is a major emphasis. Expect to cultivate a calm, grounded travel with a steady upper body, develop balanced reciprocal tension, and refine clean, fluid accuracy inside the slot. The curriculum follows a cycle of two weeks of challenging new material followed by a dedicated week of review to help shift skills from active concentration to reliable muscle memory. The goal is to free the mind to connect with the music and the partner so the dance becomes effortless. This series is intended for dancers who are already comfortable with Shag fundamentals and want a deeper, more disciplined approach to their craft. Hosted at the Optimist Club of Colonial Heights.

6-Week Intermediate Carolina Shag Dance Class Series

Step beyond memorized patterns and into the flow of Carolina Shag in a six week intermediate series centered on partnership, musicality, and polished technique. Instruction highlights clear, respectful communication between lead and follow, treating movement as a conversation of suggestions and responses so both partners develop shared awareness and move as one. The training refines the classic Shag look and feel. You will steady the upper body with less vertical bounce, build balanced two way connection, and cultivate smooth accuracy while traveling the slot. Learning is paced to ease the mental load, with two weeks devoted to new material followed by a week focused on review and integration, then the cycle continues. The goal is to let mechanics settle into muscle memory so attention can shift to the music and the partnership with ease. This series is intended for dancers who are solid on Shag fundamentals and want a deeper, more disciplined approach. Sessions take place at the Optimist Club of Colonial Heights.
