The class begins with an introduction to how koji shapes familiar ingredients such as miso, soy sauce, sake, mirin, and vinegar. A guided tasting then shows how fermentation changes flavor and texture, with side-by-side bites like tofu paired with soy sauce and with soy sauce koji, classic salt pickles compared with salt koji pickles, and spinach goma-ae sweetened with ama koji rather than sugar. Amazake, a gently sweet fermented rice drink, is included, and steamed rice is served to highlight umami and sweetness. Participants make salt koji and soy sauce koji to take home, with an option to prepare tamari koji for an additional fee. Guidance covers several at-home methods to continue fermentation, including using a yogurt maker, a sous vide setup, or simple room-temperature curing. A demonstration of sweet koji is provided, and everyone receives a ready-to-use portion to enjoy immediately. Class policies include a minimum enrollment of three participants, with a full refund if the session is canceled 48 hours in advance due to low enrollment. Turin-born Roberta Gambarini gained international attention after placing in the 1998 Thelonious Monk Jazz Vocal Competition and has since appeared at Carnegie Hall, the Hollywood Bowl, major festivals such as Monterey and Newport, and New York's Blue Note. A multi Grammy nominee for the albums Easy to Love and So in Love, she is also known as a lyricist, arranger, and educator. Her singing combines instrumental-level command, horn-like phrasing, and the clarity of a gifted storyteller, honoring the legacies of Ella Fitzgerald, Sarah Vaughan, Carmen McRae, and Billie Holiday while remaining unmistakably herself. Tamir Hendelman, born in Tel Aviv and raised in Los Angeles, began keyboard studies at six, won Yamaha's national competition at fourteen, and earned a composition degree from the Eastman School of Music. He tours with his trio as well as the Jeff Hamilton Trio and the Clayton-Hamilton Jazz Orchestra, and is a sought-after collaborator for vocalists, with credits including Natalie Cole, Jackie Ryan, Barbra Streisand, and work alongside Gambarini. Jewish Summer Fest 2026
Celebrate Jewish culture through food, music, and art at the 20th annual Chabad Jewish Summer Fest. The evening features live Jewish music, hands-on craft activities, children’s rides, classic games, and face painting, along with a kosher barbecue serving hot dogs, burgers, falafel, and more. All are welcome, regardless of background or faith. Rabbi Avrohom Rapoport, the event coordinator, shares that the aim is to give children and their families a lively night together and a positive Jewish experience. The concert is free, rides and a craft badge are available with an $18 donation, and food will be sold on site. The festival is planned for Newport Ave. and the beach near the Ventnor Library, contingent on the weather. The event is organized by Chabad at the Shore, whose work supports Jewish continuity through education and social programs.

The Storytellers return to the Sawdust Art Festival with alternating sets on The Deck that leave plenty of time to explore the festival’s artist and craft booths. Their progressive take on bluegrass blends country blues, old-time, and folk into lively improvisations and resonant vocal harmonies, delivered with a free-spirited vibe. Since 1967, the festival has championed thousands of local artists, creating a vibrant setting for music and craftsmanship. Recent appearances for the band include Huck Finn Jubilee, Calico Bluegrass Festival, Good Old Fashioned Bluegrass Festival, and Desert Bluegrass Festival, along with a headlining set at the Prescott Bluegrass Festival and sharing the stage with Peter Rowan at the Brookdale Bluegrass Festival. In 2022 they held a year-long residency at Treasure Island Casino and Resort in Las Vegas, and in 2023 they became the first bluegrass-style band to play one of NAMM's premier stages. Admission is $10 for adults, $7 for seniors 65 and older, and $5 for children ages 6 to 12. Children 5 and under are admitted free and do not require a ticket.

A pianist, singer, songwriter, and producer, Maimone brings a blues-rooted sound shaped by a swampy New Orleans vibe with shades of Dr. John and Leon Russell. He has averaged more than a hundred performances each year as a solo artist, with his trio Mutts, and as a session keyboardist, appearing on late night television, at major festivals, and at notable venues. His work also includes playing keys with Stevie Wonder in a tribute honoring his late husband, Howard Bragman.
